The last few days, in our area of world, have been exceedingly hot. The kind of hot where you can sit in the shade and just sweat.
Most people try to tell you that women don’t sweat….they glisten. (I think it might be women trying to perpetuate this myth). I am pretty sure this weather is way beyond glistening weather and is just regular, hot, sticky sweat weather.
I decided I should try make some type of treat that would be cool, tasty and slightly sweet. I looked through my cookbooks till I found a recipe for Frozen Fruit Cups.
These are so easy to make and once made can be frozen for up to 3 months. You will need to get approximately 3 dozen – 4 ounce plastic cups that have snap on lids. These type of cups also stack really great when they are frozen.
Frozen Fruit Cup
1 can crushed pineapple (do not drain)
1 lg. can fruit cocktail (do not drain)
2 cans mandarin oranges (drain these)
6 bananas, sliced up
1 pound fresh strawberries (or frozen)
1 12 oz. can frozen orange juice (thawed)
1 cup white sugar
2 12 oz. cans 7-up or Sprite (or similar lemon-lime soda)
Mix all ingredients together in large bowl.
Spoon into plastic 4 oz. cups (keep stirring as you go).
Cover with lids and stack in your freezer.
Will keep up to 3 months frozen.
Take out of freezer prior to serving so they are slightly slushy.
This is a recipe that you can tweak to your own taste in fruit. I have one son who would definitely forget putting bananas in. I guess if I serve him some; he will just have to eat around them!
I have found; that after an afternoon of mowing the lawn…..(.yes we still use a push mower on our farmyard and no….it is not self-propelled) it is wonderful to sit on the porch and enjoy one of these little cups of frozen deliciousness. I tend to not wait till they are slushy and just eat them like a popsicle without the stick.
After listening to the weather forecast I am thinking I may have to make another batch of these soon as they are disappearing quickly.
If you have any suggestions for cool summertime treats that help beat the heat, please post them in the comments. I would love to try some new recipes for summer.
May this day find you enjoying your summer and don’t forget to take the time to make yourself a cool treat on a hot day.

I make lemonade by filling a gallon jar with water, adding 5 teaspoons citric acid and two cups of sugar. Stir until sugar is dissolved, then add one fresh sliced lemon. Let set on counter 8-12 hours then remove lemon slices. Chill and serve, may garnish with more fresh lemon slices

Have you tried making the Ninxgia Red popsicles yet? And my grandma made the fruit cups all the time also. Maybe that is why I also like them…..it brings back good memories..

I enjoy throwing my grapes directly into the freezer. A handful at a time is a quick cool down!

I use a different recipe for frozen fruit cups, but idea is the same. Some of our grandchildren think these just grow in grandmas freezer!

That comment about the grandkids just made me laugh. Pretty sure that is normal for kids.
